Boma Banana Bread Recipe
I first tried this banana bread when we visited Boma back in February and I fell in love with it! The restaurant is located in Disney's Animal Kingdom Lodge. Boma is located in Jambo House on the lower level and it is a buffet and amazing! We ate the breakfast and I plan on doing a review on the breakfast we got to experience. But I wanted to share this amazing recipe with you all because it tasted amazing that morning we had in February. I admit I had 3 pieces then!
Boma Banana Bread Recipe
This recipe will make 2 loaves of bread.
Ingredients:
2 sticks of butter, softened
1 1/4 cups sugar
2 eggs (I use large)
2 eggs (I use large)
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
3 overripe bananas (use ones with black spots for the most flavor), mashed (I use 2 cups)
1/2 teaspoon vanilla extract
1/2 cup buttermilk*
*Buttermilk substitute: pour 1 tablespoon of lemon juice or vinegar into the bottom of a measuring cup. Fill to the 1/2 cup mark with regular milk. Let sit for 5-10 minutes to slightly curdle. Use as directed below.
Directions:
Preheat oven to 350 degrees. Spray two loaves pans with non-stick cooking spray. Set aside.
Cream butter, sugar, and eggs in a large bowl with an electric mixer. In a separate bowl, mix flower, baking soda, baking powder, and salt. Add the flour mixture to the butter mixture and mix on low. Add in the mashed bananas, buttermilk and vanilla. Mix well. Pour batter evenly into the two loaf pans. Bake in the oven at 350-degrees for 50 minutes or until toothpick inserted in center comes out clean. Let cool completely before attempting to remove from pans. Slice when cool and enjoy!
