Pot Roast, Minute Rice & Fresh Veggies! Yum!

I have been trying to cook healthy for my family because we need to start eating better in our house. I'm happy to say that this week and last week was a success in cooking healthy meals. Last week I made spaghetti squash for the first time in years and it was awesome and even better when Olivia ate it. Score! 

Well this past Monday I cooked a really nice healthy meal for my family. I decided to cook pot roast, Minute® Rice and fresh veggies. To make the pot roast I used a recipe that I found online but I modified it to my liking. I took a chuck roast and seared it on both sides in a hot pan with some extra virgin olive oil, then I halved an onion and seared it in the evoo too until both sides were browned some. Then I placed the pot roast in the crockpot, added water about half of the pot roast, and added about 4 beef bullion cubes, added the onion in as well. Covered the pot roast and set on low for roughly 8 hours. This is what the pot roast looked like in the crockpot when it was just about done.

Next I decided to saute some fresh green peppers and some zucchini squash in a pan. First I cut up the green peppers and added them into the pan with a little evoo and some light butter. Then I added the cut up zucchini (used 2) and sauteed a bit more. Then added the top to the pan and let it cook for about 10-15 minutes. Stirring every couple of minutes to make sure they all get nice and cooked well. Added some pepper to it as well.


My final item that I cooked was the Minute® Rice. I didn't use the boil in a bag one just the rice you get in the box. It was super easy to cook as well. Much easier to do rather than the bag ones because I always seem to either over cook them or burn my fingers getting the bag out of the pan of boiling water. For the rice, I boiled about 2 cups of water and once the water was fully boiling; I added 2 cups of rice into the pan, stirred in the rice and removed from the heat. Very easy to do indeed. Then I let sit for 5 minutes covered. Gave me enough time to finish cooking the veggies and getting the pot roast out of the crockpot. When it was time for dinner I added all the items to our plates and we had a wonderful, healthy meal for the family. Olivia ate most of hers and of course added ketchup to it but she ate it. Jason and I both enjoyed it and we have leftovers for another meal this week. The rice was very tasty and was very soft. We really loved it!
