Easy Pumpkin Spice Cake Recipe
While looking online this past weekend for something quick and delicious to cook for Homecoming at Church, I came across this awesome recipe that I had to share with you all!
I found it online via pinterest and well it was awesome and is something that I will definitely make again in the future. It is Pumpkin Spice Cake (or cupcakes) with Cream Cheese frosting.
Ingredients:
1 Box Spice Cake Mix
1 15 oz Can of Pure Pumpkin
1 egg
1 tbsp of water
1 or 2 containers of the Cream Cheese Frosting. (I got the Whipped Betty Crocker)
Directions:
Preheat the oven at 350 degrees. Grease cake pans or put in liners for the cupcakes.
Get large bowl and add the box of Spice Cake mix and pumpkin to the bowl. Mix well. Then add the egg and tbsp of water to the mixture. This will make the cake mix smoother and fluffier as well. Next you want to take a spoon and spoon in the mixture to either the cake pans or to the liners.
Cook the cake to the directions on the back of the cake box. Take out and let cool completely.
After completely cooled you may ice the cake or cupcakes with the cream cheese frosting. Next enjoy them!
They were the hit of the party on Sunday at Church and I've decided that I'm going to continue to make these for the future and maybe for Thanksgiving. To me the cupcakes tasted like mini pumpkin pies with frosting on top of it. Even my daughter who is extremely picky when it comes to trying new foods, she fell in love with the cupcakes and asked for another one after she got done eating the first one!
